Simple Fruit Salad

  • 1 pound fresh strawberries cut in quarters
  • 1/4 fresh pineapple cubed
  • 1 cup black berries 6 oz container
  • 1 cup blueberries 6 oz container
  • 3 kiwis sliced and quartered
  • about 8 cups of fruit total
  • 2/3 cup orange juice
  • 1/3 cup lemon juice
  • 1/3 cup brown sugar
  • 1/4 tsp vanilla extract


  1. In a large bowl, combine all of the fruit.
  2. Combine the orange juice, lemon juice, brown sugar, and vanilla extract. Bring to a boil, and turn down to a simmer (make sure you are still seeing regular bubbles). Simmer for five to eight minutes until the liquid is reduced to less than 3/4 cup. Allow to cool completely and toss with the fruit.
